I think we can all agree that cookies are great. So cookies that come together in under 10 minutes are magical. I remember making no-bake cookies when I was a kid and thinking about how cool it was that we didn’t have to bake them in the oven. Just mix ‘em up and pop ‘em in your mouth. Hooray for cookies!
No-Bake Cookies

Ingredients
- 1/2 cup unsalted butter
- 1 1/2 cups granulated sugar
- 1/2 cup brown sugar
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- Pinch of salt
- 3/4 cup creamy peanut butter
- 2 teaspoons vanilla extract
- 3 cups rolled oats
Instructions
- Line a couple of cookie sheets with parchment paper and set aside.
- Melt the butter, sugars, milk, cocoa powder, and salt together in a medium saucepan over medium heat.
- Bring to a boil and continue to boil for 1 minute, stirring occasionally.
- Remove from heat and stir in the peanut butter and vanilla.
- Now stir in the oats.
- Use a cookie scoop to drop balls of cookie dough onto your prepared pans. Allow to set up at room temperature for about 30 minutes. Enjoy!
