Hey y’all! It’s me, it’s really me, here with my first non-baby post since June. It’s September 😳 How did that happen? Time flies when you have a newborn. Actually it doesn’t always fly, sometimes it crawls and every day feels a bit like groundhog day. Buuuut, I’m here and I’m excited to share this post with you. I made some freezer meals before Wyatt was born, just like I did before Quinn arrived. Thank. Goodness. Because seriously, who has time to cook when your life is a whirlwind of poopy diapers and being a milk machine (TMI?). #momlife
Anyway, let me tell you what helped keep our bellies full during this newborn phase.
For starters, I tried to keep things simple. I also tried to spread the freezer cooking out over the course of several days to make things easier (and because at 7 months pregnant, I’d start having contractions if I stood for too long).
Let me share some links with you!
Chicken Pot Pie  Comfort food at its finest. A buttery and flaky homemade pie crust set this recipe over the edge.
Marinara  I made a couple batches of this meaty marinara. It’s super simple and delicious. It’s easy to toss with noodles for an easy meal. Another idea is to mix it with refrigerated tortellini (no need to boil them first), top with mozzarella and bake at 350 for 30 minutes covered with foil and 10 additional minutes with the foil off. Yummy!
Sloppy Joes  I don’t know what it is about Sloppy Joes, but I love ’em. Make a couple of batches and freeze some hamburger buns and bam, you have yourself a delicious meal!
Spinach Lasagna Roll-Ups Feeling low on energy? Pasta and spinach for the win! Add some ground sausage to the mix and you’re in for a filling and satisfying meal.
Chicken Chile Enchiladas Ohhhhh, I love enchiladas. And these freeze surprisingly well. Top with avocado, lettuce, and tomatoes!
Now don’t go forgetting breakfast. It is the most important meal of the day, don’t you know?
Smoothie Packs  Fun for breakfast or a snack. I tossed in chia seeds and flax meal to amp up the health-factor.
Egg Muffins  I love these little bites. An easy way to toss eggs into your mouth.
Oatmeal Breakfast Cookies  Because cookies for breakfast. Can I get an Amen?
Oatmeal Packs  Alright, these aren’t a freezer meal, but they are so easy and so great for a quick breakfast. I like mine made with milk, it adds more flavor. (Also, for all of you breastfeeding mamas out there, I have found that oats do wonders for my supply.)
And let’s not forget snacks and dessert…
Pie Crust Just in case you feel like baking a pie. Because peach season was calling me and that pie wasn’t gonna bake itself.
No-Bake Energy Bites  ALL OF THE SNACKS. GIVE ME ALL OF THE SNACKS. I’m hungry ’round the clock and having these bites on hand has been fan-tastic.
Here are a few more ideas:
- If you’re making a meal, double it and freeze half.
- Try these chicken meals, so easy and delicious!
- Soup season has arrived, so make a big batch and freeze whatever you don’t eat. Soup freezes beautifully (unless it has noodles in it, then it gets a little sketchy).
- Roast chicken breasts and freeze them for easy tacos, chicken salad, or whatever chicken dish your heart desires.
- I love this easy slow cooker recipe for pulled pork.
Make sure to either label your meals with directions or stash the directions in a place you will remember (turns out pregnancy brain lives on post-pregnancy).
I’m planning on adding a few more meals to our freezer every couple of weeks to make things simple. It’s crazy how eating a couple of easy freezer meals each week make a huge difference in our lives. Such a time-saver! Also, meal delivery services are amazing and thankfully, we were gifted some meals from friends which helped tremendously. If you’re in the Denver area, you must check out The Spicy Radish and SupperBell.
Have any of you found any freezer meals that you swear by? If so, please share. I’d love some new ideas! Happy freezer cooking to you all 🤗
