Fudge Pops

Summer is here! Summer is here!

And it. is. hot.

To find some relief from the heat (and to satisfy my chocolate craving), I made these Fudge Pops. Reminiscent of the classic fudgsicles of my youth, minus all the sugar and corn syrup. A cool treat that you don’t have to feel bad about. So you should probably just go ahead and celebrate the beginning of summer with these cool treats.

Serves: 10 popsicles
Cool down with a luscious fudge pop.
Ingredients
  • 1 cup milk
  • 2 cups milk chocolate chips
  • 1 teaspoon vanilla
  • 1 1/2 cups plain yogurt, this is roughly 2, 5.3 oz. containers (Greek or not, whichever you prefer)
Instructions
  1. Melt the chocolate chips together with the milk. You can either do this on the stove-top or in the microwave in 30-second intervals. You want the mixture to become completely smooth.
  2. Stir in the vanilla.
  3. Whisk in the yogurt until completely smooth. No lumps, please!
  4. Carefully pour the mixture into your popsicle molds (a pitcher works beautifully for this, or a piping bag works too). Stick in your popsicle sticks and freeze for around 6 hours before enjoying.
Notes
Prep time does not include the 6 hours that you need to freeze the pops.[br][br]The yogurt you choose to use is totally up to you. I used a plain Greek yogurt to give the pops a little tang, but regular plain yogurt works just as well.[br][br]To ensure a silky texture, you can pass the mixture through a fine mesh strainer or cheese cloth. It takes a little more time, but the texture isn’t as gritty.

Melt the chocolate chips and melt together. You want the mixture to be completely smooth.

Stir in the vanilla.

Now whisk in the yogurt until all of the lumps are gone. You want an extremely smooth mixture.

Whisking like a pro 😉 Of course, I got distracted by the whisker and forgot to take pictures of the mixture being poured into the molds. Use a measuring cup, pitcher, or piping bag to carefully pour the fudge pop mixture into the molds. Stick in the popsicle sticks and freeze for around 6 hours. Enjoy!
