Chocolate Chip Granola Bars are tasty, satisfying, chewy, healthy, and easy to make.
See, I can make semi-healthy things every once in a great while 😉
- 1/4 cup coconut oil
- 1/4 cup honey
- 1/4 cup brown sugar
- 1/2 cup nut butter (I used almond butter, but peanut butter would work too)
- 1/2 teaspoon vanilla
- 2 cups rolled oats
- <span class=”mceItemHidden” data-mce-bogus=”1″><span></span>1 cup Rice Cereal (Rice <span class=”mceItemHidden” data-mce-bogus=”1″><span class=”hiddenSpellError” pre=”Rice ” data-mce-bogus=”1″>Krispies</span></span> or an organic variety)</span>
- 1/2 cup cashews, chopped
- 1/2 teaspoon cinnamon
- 1/2 teaspoon sea or Kosher salt
- 1/2 cup Mini chocolate chips (I like the Enjoy Life! brand of mini chocolate chips)
- In a medium saucepan, melt together the coconut oil, honey, brown sugar, and nut butter. Simmer and cook, stirring occasionally, for 2 minutes. Remove from heat and stir in the vanilla. Allow the mixture to cool for a few minutes while you complete the next 2 steps.
- In a large bowl stir the oats, rice cereal, cashews, cinnamon, and salt together.
- Line a pan with parchment paper (any size will do, mine was a 10×6″ pan) and set aside.
- Pour the wet mixture over the oat mixture and stir to combine.
- Stir in half of the chocolate chips until combined.
- Press the mixture evenly into your prepared pan.
- Lightly pat the remaining chocolate chips over the top. Allow the bars to cool for at least 2 hours before cutting and enjoying.
- Store bars in an airtight container at room temperature for up to a week.

Add the coconut butter, nut butter, brown sugar, and honey to a saucepan. Heat until everything comes together. Continue heating and stirring for 2 minutes.

Remove from heat and stir in the vanilla.

In a large bowl, stir together the rice cereal, oats, cashews, cinnamon, and salt.

My choice for rice cereal.

Pour the wet mixture into the dry mixture.

Stir to combine.

Stir in half of the chocolate chips.

Press into a parchment lined baking pan and gently press the remaining chocolate chips over the top. Allow to set for a least a couple of hours before cutting and enjoying.
