Tomorrow is Valentine’s Day and I have something you are going to love. It’s simple, luscious, and sweet. Mascarpone Stuffed Strawberries are just the right dessert for February 14 or any other day of the year. Eat up, Valentines.
Mascarpone Stuffed Strawberries

Serves: 12 strawberries
Sweet and juicy strawberries are always delicious, but filling them to the brim with mascarpone and drizzling with chocolate sends them over the edge. Yum!
Ingredients
- 8 oz. Mascarpone
- 2 tablespoons powdered sugar
- 1/4 teaspoon vanilla (I used clear vanilla)
- About 12 large strawberries, washed and hulled
- 1/4 cup chocolate (I used dark chocolate)
- 1 teaspoon shortening (optional)
Instructions
- Mix the mascarpone, powdered sugar, and vanilla until combined. Place in a piping bag.
- Pipe the mascarpone mixture into each strawberry.
- Melt the chocolate with the shortening in the microwave until smooth, in 15-second intervals.
- Drizzle the melted chocolate over the filled strawberries.
- Enjoy within a day of making. Store in refrigerator.
