Yessss, I like these bars berry, berry much. First of all, the crumble crust is on point. It almost tastes like a berry crisp and we all know there’s nothing wrong with that. Throw a scoop of ice cream on top for good measure, because who says you can’t eat ice cream in January? (Just crank up that thermostat.)
Berry Oat Bars

Buttery, crumbly, and sweet bars that are incredibly easy to make.
Ingredients
- Crumb Crust/Topping
- 1/2 cup unsalted butter, melted
- 1 cup oats
- 3/4 cup AP flour
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 tablespoons honey
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- Pinch of salt
- Berry Layer
- 2 cups of berries, chopped up (I used 1 cup of strawberries and for the remaining 1 cup, a mix of raspberries, blackberries, and blueberries)
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
Instructions
- <span class=”mceItemHidden” data-mce-bogus=”1″><span></span>Line and grease an 8×8″ pan and <span class=”mceItemHidden” data-mce-bogus=”1″><span class=”hiddenSpellError” pre=”and ” data-mce-bogus=”1″>preheat</span></span> your oven to 350 degrees Fahrenheit.</span>
- Stir all of the crumble ingredients together until combined. I used the paddle attachment on my stand mixer to make this super easy.
- Press a little more than half of the crumble mixture evenly into the bottom of your prepared pan.
- Stir together all of the berry layer ingredients. Pour the berry mixture over the crumble crust.
- Crumble the rest of the topping over the top of the berries.
- Bake in preheated oven for 45-55 minutes. You want the crumble topping to be set and golden.
- Remove from oven and allow to cool in the pan before slicing, serving, and enjoying. Store in an airtight container in the refrigerator for up to a week.
