Easy to make and hard to resist!
Ingredients
- 1/2 cup popcorn kernels
- 1 cup pretzels
- 1 cup honey roasted peanuts
- 1/2 cup butter
- 1/4 cup corn syrup
- 1 cup brown sugar
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla
Instructions
- Heat oven to 250 degrees Fahrenheit. Line a large baking sheet with parchment paper and set aside.
- Pop your popcorn on the stove-top with a small amount of oil in a medium pot. This should make about 10 cups of popcorn (or a few bags of microwave popcorn, if you prefer).
- In an extra-large bowl, mix together the popcorn, pretzels, and peanuts.
- Melt the butter in a small saucepan over medium-high heat. Add the brown sugar and corn syrup and bring to a bubble. Reduce heat to low and continue heating for about 5 minutes, without stirring.
- Remove the caramel mixture from the heat and stir in the salt, baking soda, and vanilla.
- Pour the caramel over the popcorn mixture and use a rubber spatula to coat everything with the caramel.
- Spread the caramel popcorn onto your prepared baking sheet. Bake in preheated oven for 30 minutes, giving the mixture a stir every 5 minutes.
- Remove from oven. Allow to cool a bit and then break apart the big chunks. Store in an air-tight container for up to a week. Enjoy!
Notes
Feel free to stray from the pretzels and peanuts, if you wish. Chocolate candies, dried fruit, and other varieties of nuts would work well.
