Peach Cornmeal Cake

Peaches, oh how I love peaches. I just can’t get enough of them! I must not be the only one crazy for them these days, because the cashier at the grocery store didn’t even bat an eye when I unloaded 24 peaches from the grocery cart this morning. (I have a peach addiction, send help.)

One of my new favorite peach desserts is this beauty: Peach Cornmeal Cake.

I highly recommend using a cast iron skillet for this cake, because it adds great flavor and a nice outer crust. However, you can also use a round baking dish (9″ or a little larger), just be sure to keep a close eye on the cake as it bakes, as the bake time might be a bit different.

A cross between cornbread and cake, beautifully sweetened with the season’s best peaches. Great for dessert or even breakfast.
Ingredients
  • 1 cup cornmeal
  • 1 cup flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
  • 1/2 cup sugar
  • 1/2 cup honey
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 3/4 cup buttermilk
  • 3 large peaches (peeled or unpeeled, sliced)
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Grease a large skillet (I used a 10 1/4″ cast iron skillet) and place in oven while it preheats.
  2. Whisk together the flour, cornmeal, baking powder, and salt in a large bowl and set aside.
  3. Beat together the butter, sugar, and honey for 2-3 minutes with a hand mixer. Add the eggs. Mix in the vanilla and buttermilk.
  4. Slowly add the wet ingredients to the dry ingredients and mix until just combined.
  5. Carefully remove the preheated skillet from the oven. Pour the batter into the skillet. Carefully arrange peach slices on top, the batter is pretty heavy so the peach slices should sit on top.
  6. Bake for 25-30 minutes, until the center of the cake is set and the edges have started turning a lovely golden brown (the peaches will give off some juice while they bake, so use a toothpick to check that the batter is set). Remove from oven and allow to cool for 15 minutes before slicing and enjoying.

Whether or not you choose to peel the peaches is up to you. If you prefer peeled peaches, the easiest way to peel them is by blanching them. Slice an “x” in the bottom of the peaches with a sharp knife. Bring a large pot of water to a boil and drop the peaches in. Allow them to boil for 1 minute and then immediately remove the peaches and place them in a large bowl filled with ice water. The skin should slide right off now!
