Coffee Cake Donuts with Cinnamon Vanilla Glaze

I’ve hit the donut jackpot with this recipe for Coffee Cake Donuts with a Cinnamon Vanilla Glaze! These irresistible baked donuts have a coffee cake crumb topping and are drizzled with the perfect cinnamon vanilla glaze. I really can’t get enough of them!095

Coffee Cake Donuts

From: Spoonful of Sugar Printer-Friendly Recipe
Makes: 12 Donuts in a standard-sized donut pan
Prep Time: About 15 minutes
Cook Time: 15-18 minutes

Ingredients

Donuts

1 3/4 cup flour
3/4 cup granulated sugar
1/4 cup brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
3/4 teaspoon nutmeg
1 egg
1 cup whole milk
2 tablespoons unsalted butter, melted & cooled
1 teaspoon vanilla

Crumb Topping

1/4 cup unsalted butter
1/3 cup brown sugar
3/4 cup flour
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
1/4 teaspoon salt

Cinnamon Vanilla Glaze

1 cup powdered sugar
1 tablespoon milk, more if needed
1/2 teaspoon vanilla
1 teaspoon cinnamon

Directions

Donuts

Preheat oven to 350 degrees. Spray donut pans with nonstick cooking spray and set aside.

Sift together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl.  Stir in the brown sugar until combined.  In a small bowl, combine the melted butter, egg, milk, and vanilla.  Stir the wet ingredients into the dry ingredients.  Spoon into the prepared baking pans, dividing evenly between each donut mold.

Crumb Topping

Combine all of the crumb topping ingredients in a small bowl and use a fork or pastry cutter to mash together until all of the ingredients are combined. The mixture should have chunks of butter throughout. Sprinkle the topping evenly over each donut.

To Bake

Bake in preheated oven for 15-18 minutes, until the donuts are set.  Remove from the oven and allow to sit for 5 minutes before removing from pan and placing on a wire rack.

Cinnamon Vanilla Glaze

While the donuts are cooling, prepare the glaze. Combine all of the glaze ingredients in a small bowl. Add more milk if the mixture is too thick. Drizzle over the donuts and enjoy!

I started by making the crumb topping. Combine all of the crumb topping ingredients in a bowl. Please ignore the fact that I made twice as much as was needed. I wanted to make sure I had enough! Trial and error in the baking world 🙂

Make sure the crumb ingredients are fully combined and big chunks of butter remain. If you make your crumb topping first, stick it in the freezer while you prepare the donuts. Otherwise, use immediately. You don’t want the butter to get too soft before baking.

Now prepare the donuts. Sift together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg & salt.

Mix in the brown sugar.

Mix together the butter, egg, milk, and vanilla. Then stir into the dry ingredients.

Grease your donut pans

Distribute the donut batter evenly between the pans.

Crumble the topping evenly over the donut batter. Bake in 350 degree oven for 15-18 minutes.

Cool the donuts in the pan for at least 5 minutes before removing to cool on a wire cooling rack. I always get a touch too much batter in the pans & the hole of my donut disappears. Great trick, use a cupcake corer to pop the center of the donut out (or use a knife to cut the hole out).

Prepare the glaze by combining the ingredients until smooth. Drizzle over donuts and enjoy!
