Easy Chocolate Trail Mix Bites

Anyone having a case of the Mondays? To help you avoid a blah start to your week, I have an easy snack recipe that will give you just the boost you need. These easy chocolate trail mix bites are packed with all sorts of goodness: nuts and dried fruit for energy and chocolate to make you smile.

Makes about 1 dozen bites
Prep Time: 10 minutes

Ingredients

1 cup of chocolate chips (I used dark & white)
Almonds and cashews
Dried fruit (such as cranberries, cherries, and blueberries)
Pretzels

Directions

Line a baking sheet with nonstick lining and set aside.

Place chocolate chips in a microwave-safe bowl and heat in 15-second increments, stirring in between, until fully melted (usually takes a total of 45-60 seconds). Spoon out the chocolate into circles on prepared baking sheet. Immediately top with desired nuts, pretzels, and fruit.

Place sheet in freezer for 10 minutes to allow the chocolate to harden quickly (alternatively, you could pop the sheet into the fridge or leave at room temperature to harden, it will just take a little longer). Enjoy!

Repeat with dark chocolate.

Repeat with dark chocolate. After all of the circles are topped, put the baking sheet in the freezer for 10 minutes to allow the chocolate to harden. Remove from sheet and enjoy!
