Chocolate Peanut Butter Saltine Toffee

Let’s revisit an old recipe, shall we? It’s a great treat to make, super easy and I usually have all of the ingredients on hand. An irresistible sweet that’s great for a crowd!

Ingredients

1+ sleeve of Saltine crackers
1 cup brown sugar
1 cup unsalted butter
2 1/2 cups semi-sweet chips
1/3 cup peanut butter
M&M’s (or other candies or nuts)

Directions

Preheat your oven to 400 degrees. Line a jelly roll pan with foil or parchment paper.  Place the saltines in a single layer on the prepared pan. (If you leave a small gap between each cracker, you will only need one sleeve of crackers, but if you push them all together, you’ll need more than 1 sleeve.)

Bring the brown sugar and butter to a boil in a saucepan over medium heat. Once boiling, turn the heat down to medium-low and boil for 3 minutes without stirring.

Pour the sugar mixture evenly over the crackers.  Bake for 5 minutes in preheated oven.

Take the pan out of the oven and spoon the peanut butter over the top.  Bake for a minute.  Remove from oven and spread the melted peanut butter over the crackers.  Sprinkle on your chocolate chips and bake for another minute.

Spread the chocolate chips evenly over the crackers with a spatula. Top with M&Ms and freeze until hardened, about 1 to 2 hours.

After the toffee has set, break it into pieces and store in a plastic bag for up to four weeks (should be kept in a cool place or stored in the freezer to prevent melting).  Enjoy!
