Graham Crackers

We have a graham cracker monster in our house and her name is Quinn. She is constantly running to the kitchen cabinet to pull out crackers. But how can you say “no” when she holds them up and says “gam cacker?” I mean seriously, it’s impossible. So impossible, that I found myself making gam cackers from scratch, just for my little monster 🙂 But guess what? They are really quite easy to make and I feel less mom-guilt giving her a homemade version. She loves them!

Make around 24 graham crackers

Ingredients

1 1/2 cups all-purpose flour
1 c. whole wheat flour
3/4 cup brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
8 tablespoons butter, softened
1/4 cup honey
5 tablespoons milk
1 tablespoon vanilla

Directions

Preheat oven to 350 degrees and line baking sheets with nonstick baking liner. Set aside.

Whisk together the flour, brown sugar, baking powder, baking soda, salt, and cinnamon in a large bowl. In a small bowl, stir together the butter, honey, 4 tablespoons milk, and vanilla. Add the wet ingredients to the dry ingredients and stir until it all comes together and forms a dough. Roll out the dough into 1/4″ thickness and cut out shapes. Transfer shapes to prepared baking sheet and prick with a fork. Brush the tops with remaining tablespoon of milk.

Bake in preheated oven for 10-15 minutes (the longer you bake them, the crisper they will be), until the graham crackers are set and turning golden brown. Remove from oven and cool on sheets for a few minutes before removing to cool completely on a wire cooling rack. Store in an air-tight container. Enjoy!
