Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup olive oil
1/2 cup sugar
2/3 cup lemon Greek yogurt (or plain Greek yogurt for a less lemony flavor)
1 Meyer lemon, zested and juiced (a regular lemon will work, too–just a little less sweet than the Meyer lemon)
1 egg
1 teaspoon vanilla extract
2 tablespoons chia seeds
Directions
Preheat your oven to 400 degrees. Prepare muffin tin by lining with 8 muffin liners. Set pan aside.
Whisk your dry ingredients together in a medium bowl: flour, baking powder, baking soda, and salt. Set aside
Now mix together the olive oil, sugar, yogurt, lemon juice, and lemon zest in a large bowl. When combined, mix in the egg and vanilla.
Add the dry ingredients slowly to the wet ingredients, stirring until just combined. Fold in the chia seeds.
Pour the batter into your prepared muffin tin. Fill each muffin cup 3/4 full (you may end up making more/less muffins, depending on the size of your muffin tin). Bake for 13-15 minutes in preheated oven, until the muffins are starting to turn golden on top and the center is set. Enjoy!
