Gooey Butter Cookies

You guys, these cookies are crazy good.  The name says it all; they seriously melt in your mouth. Yum.

Gooey Butter Cookies                     Printer-Friendly Recipe

Makes about 2 dozen
Prep: 10 minutes  Inactive Prep: 30 minutes
Bake Time: about 10 minutes

Ingredients

1 (8 ounce) package cream cheese
1/2 cup butter, softened
1 egg
1/4 teaspoon vanilla extract
1 (18.25 ounce) package yellow cake mix
1/4 cup confectioners’ sugar

Directions

Preheat oven to 350 degrees F. Set aside two cookie sheets.

Cream together the cream cheese and butter in a medium mixing bowl until smooth, about 2 minutes.  Mix in the egg and vanilla until just combined.  Now mix in the cake mix until fully incorporated.  Cover the cookie dough and refrigerate for 30 minutes, this will keep the cookies from spreading when you bake them.

Remove from fridge and roll into 1-inch balls.  Roll each ball in the confectioners’ sugar.  Place on cookie sheet, 1-inch apart.  Bake for about 10 minutes.  Allow cookies to cool on the baking sheets for a couple of minutes and then remove to cool completely on a wire cooling rack.  Enjoy!
