No-Bake Cherry Cheesecake Cups

Cheesecake is quite possibly my favorite dessert item.  So it’s no wonder that these quick & easy No-Bake Cherry Cheesecake Cups were devoured in a flash.
Creamy, delicious, sweet, tasty, splendid, and all sort of other good things.  That’s what this dessert is.  You should make it, ASAP!

No-Bake Cherry Cheesecake Cups          Printer-Friendly Recipe

Recipe Adapted From: Cafe Delites
Makes: 4 Servings

Ingredients

cherry Sauce

1 cup fresh or frozen cherries, pitted
2 tablespoons granulated sugar
2 tablespoons water

Cups

8oz package of cream cheese, softened or at room temperature (low fat or fat free, if you please)
1 cup plain Greek yogurt
¼ cup granulated sugar
1 teaspoon lemon juice (optional)
1 cup crushed Oreos (somewhere around 8-10 Oreos)

Instructions

Cherry Sauce

Add the cherries, 2 tablespoons of sugar, & 2 tablespoons of water to a medium saucepan.  Bring the mixture to a boil and then reduce the heat and simmer until the sauce thickens, about 5 minutes.  Set aside to cool a bit.

Using an electric hand-mixer, beat together the cream cheese, yogurt, sugar, & lemon juice until smooth.

to assemble cups

In small cups, layer the ingredients together.  I did a layer of the crushed Oreos (reserving a small amount for the tops), 1/2 of the cheesecake mixture, 1/2 of the cherry sauce, followed by the remaining 1/2 of the cheesecake mixture, the remaining 1/2 of the cherry sauce, and finally, a sprinkle of the rest of the Oreos.  Layer however you desire, it will taste good no matter what!  Add fresh cherries or whole Oreos to the tops to really send the cups over the edge.  Refrigerate to allow the cups to set up, about 10 minutes.  Of course, refrigerate any leftovers (if you have any…).  Enjoy!

Whip it up until smooth.

Add the Oreos to the bottom of 4 cups (leave a little bit for garnish).

Place half of the cheesecake mixture on top.

    Hi Melissa–those looks delicious!! Clay wants to know if you are sending some to South Dakota? Cherries and cheesecake–the best combination ever!!

      Thanks! I think about him every time I make something cheesecake-related 🙂 I don’t think you’d like opening a box of cheesecake cups that came via mail, though. Sounds messy! But I could make them next time we’re back or next time you guys come out here!!!
