Peanut Butter Heart Cookies

Happy Valentine’s Day!  I had to wait until today to share this recipe, because it was a surprise for my Valentine.  Josh loves peanut butter cookies, so these cookies are perfect for him!  Quinn surprised him, too, with a sweet Valentine.  Delicious cookies and an adorable little girl, this has been a great day!

Peanut Butter Heart Cookies       Printer-Friendly Recipe

Ingredients

1/4 cup butter
1/4 cup shortening (Crisco)
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1/2 tsp vanilla
2 medium eggs
1 1/2 cup all-purpose flour
1 tsp baking soda
1/4 tsp salt
Additional white sugar for rolling
12 oz package Reese’s Peanut Butter Hearts

Directions

Start by preheating oven to 375.

In the bowl of a mixer, cream together the butter, shortening, peanut butter, granulated sugar, and brown sugar until light and fluffy (this will take a couple of minutes).  Mix in the eggs, one at a time.  Now mix in the vanilla.

In a medium-sized bowl, whisk together the flour, baking soda, and salt.  Add the dry ingredients to the wet and mix until just combined.

Scoop out 1/2-inch balls of cookie dough.  Roll in granulated sugar (place a little granulated sugar in a bowl for this step).  Bake the cookies on ungreased cookie sheets for 6-8 minutes.  You don’t want the cookies to be brown, but they should be set.  Let cool on the cookie sheets for 2-3 minutes, then transfer to cooling racks.  Place a Reese’s heart in the center of each cookie.  Enjoy!
