Crock-Pot Pumpkin Spice Latte (Two Servings)

With only a couple more days until Thanksgiving, I’m going to squeeze in one more Pumpkin Spice recipe.  Hope you don’t mind.  🙂

Crock-Pot Pumpkin Spice Lattes are a fantastic warm beverage for that mid-afternoon lull.  They’re also easy to make (easier to drink) and healthy!

Crock-Pot Pumpkin Spice Latte        Printer-Friendly Recipe

From: Trial & Eater
Prep time: 5 minutes
Cook time: 1-2 Hours
Serves: 2

Ingredients

1 cup skim milk
1 cup coffee, freshly brewed
1 Tablespoon pumpkin puree
1 Tablespoon vanilla extract
1 Tablespoon sugar
1 teaspoon cinnamon
A pinch of pumpkin pie spice & whipped cream to top (optional)

Directions

Add all of the ingredients (minus the pumpkin pie spice and whipped cream) to a small Crock-Pot and stir to combine. Cook on high heat for 1-2 hours.

Before serving, stir the liquid again.  Pour into mugs and top with whipped cream and pinch of pumpkin pie spice.  Enjoy!

Notes: To avoid having sediment at the bottom of your mug, you could pass the latte through a cheese cloth or through a French Press.  Also, this recipe can easily be multiplied for larger crowds.
