Ingredients
1 cup non-dairy milk (almond, rice, or soy)
4 tablespoons chia seeds, black or white
1 1/2 tablespoons sweetener of choice (or organic pure cane sugar)
1 teaspoon pure vanilla extract
Mixed berries of choice (I used blueberries and blackberries)
Directions
In a mason jar or small bowl, stir together the milk, sugar, and vanilla. Sprinkle the chia seeds into the milk mixture and stir to combine. Cover the mixture and refrigerate overnight. Stir occasionally (don’t worry about waking up in the middle of the night to do this, just stir before bed and again in the morning). Top with berries and enjoy!
