Monster Cookie Dough Cupcakes

After seeing this recipe floating around on Pinterest and Facebook, I just had to make it.  I mean, come on, Monster Cookie Dough Cupcakes.  Everything about that sounds amazing.  The plan had been to share with people, but it turns out Josh & I ate all 12 of them (not in one day…that would be crazy).

Monster Cookie Dough Cupcakes         Printer-Friendly Recipe

From: Wishes and Dishes
Makes: about 12 Cupcakes

Ingredients

For the Cupcakes

1/4 cup butter, softened
1/2 cup creamy peanut butter
1 cup sugar
2 whole eggs
2 teaspoons vanilla extract
1 1/2 cups flour
1 1/4 teaspoon baking powder
1/3 cup milk
1 cup semi sweet chocolate chips

For the Cookie Dough Frosting

8 oz. cream cheese, softened (don’t use reduced fat or fat-free)
1/2 c. butter, softened
1/2 c. creamy peanut butter
3 Tbsp. brown sugar
3 Tbsp. all-purpose flour
1 tsp. vanilla
1 c. oats

1-2 c. powdered sugar (I used 1 1/2 cups)
3/4 bag plain mini M&Ms (I used about 1 1/2 cups)
3/4 cup mini or regular semi-sweet chocolate chips

Directions

Preheat oven to 350º and place cupcake liners in a pan.

In the bowl of a stand mixer (or in a large bowl with a hand mixer), mix together all of the cupcake ingredients except the chocolate chips.  Once combined, stir in the chocolate chips with a spoon.  Fill each cupcake liner with cupcake batter, about 2/3 full.  Bake for 20 minutes or until the center of the cupcakes are set and pass the toothpick test.  Cool completely on a wire rack.

To make the frosting, cream together the cream cheese, butter, and peanut butter with the paddle attachment in a stand mixer (or with a hand mixer) until smooth.  Add in the brown sugar, flour, vanilla, and oats.  Mix until combined.  Add in the powdered sugar, 1 cup at a time (use up to 2 cups, until you reach your desired consistency).  Lastly, mix in the M&Ms and chocolate chips.

Use a large cookie scoop or large spoon to scoop the cookie dough frosting onto the tops of the cooled cupcakes.  Enjoy!

Line a cupcake pan with cupcake liners.

Add all of the ingredients for the cupcakes, except the chocolate chips, in a mixing bowl.

Mix well and then stir in the chocolate chips.

Fill up your cups.

Bake for about 20 minutes.

Cream together the peanut butter, cream cheese, & butter.

Mix in the oats, flour, sugar, and vanilla.

Mix in the powdered sugar, 1 cup at a time. You can use up to 2 cups, I used more like 1 1/2 cups…it all depends on the consistency of frosting you desire.

Dump in the chocolate chips and M&Ms.

Stir until combined.

Place giant spoonfuls of cookie dough frosting on each cupcake.
