Who wants cheesecake? I do, I do!! These tasty cheesecakes are miniature and filled with a surprise Reese’s Peanut Butter Cup in the middle. What more could you want?
Reese’s Peanut Butter Cup Mini Cheesecakes

Makes: 12 Mini Cheesecakes
Ingredients
3/4 c graham cracker crumbs
3 Tbls sugar
3 Tbls butter, melted
12 Miniature Reese’s Peanut Butter Cups
16 oz (2, 8 oz. packages) of light or regular cream cheese
1 c sugar
1/4 c all-purpose flour
2 eggs, room temperature
2 tsp vanilla extract
1/2 c Reese’s Peanut Butter chips
1/2 c chocolate chips
2 tsp shortening, divided
Directions
Preheat your oven to 350 degrees. Line a muffin pan with cupcake liners. Set aside.
Combine crushed graham crackers, 3 tablespoons of sugar, and melted butter in a small bowl. Press the mixture into the bottom of each muffin cup, about 1 heaping tablespoon in each. Unwrap the Reese’s cups and place one in each of the centers of the muffin cups.
In a mixer, beat the cream cheese until fluffy, about 2 minutes. Mix in the sugar, flour, and vanilla until combined. Mix in the eggs, one at a time, until combined. Spoon the cream cheese mixture into the muffin cups, about 1/4 cup of mixture for each.
Bake the cheesecakes for 20-25 minutes, or until set. Let the cheesecakes cool. Melt the peanut butter chips with 1 teaspoon of shortening in the microwave, about 30 seconds. Melt the chocolate chips with 1 teaspoon of shortening in the same manner. Now drizzle the melted peanut butter and chocolate sauces over the cooled cheesecakes with a fork or spoon. Store the cheesecakes in a refrigerator. Enjoy!
