Caramel Pecan Pie Bites

Let me squeeze in one more Thanksgiving recipe before the big day tomorrow.  Why not?  It’s another easy recipe, that can be thrown together at the last-minute, gotta love recipes like that.  I dare you to eat just one of these yummy bites.

Caramel Pecan Pie Bites            Printer-Friendly Recipe

Prep Time: 10 minutes  Cook Time: 11 minutes

Ingredients

2 boxes pre-baked phyllo cups
15 unwrapped caramels
2 tablespoons butter
1/8 cup milk
1/4 cup packed brown sugar
1 egg & 1 yolk
1/2 teaspoon vanilla
1/8 teaspoon salt
2 oz bag of pecans, chopped (about 1/2 cup)

Directions

Preheat oven to 350 degrees and place phyllo cups on a cookie sheet and set aside.  Melt the butter in a medium saucepan over low heat.  Add in the milk and caramels, stir until smooth.  In a large bowl, combine the brown sugar, eggs, vanilla, and salt.  Stir in the caramel mixture and then stir in the pecans.  Spoon the pecan mixture into the phyllo cups.  Bake for 11 minutes and serve warm.  If you don’t serve immediately, pop into a warm oven for a few minutes before serving.  Enjoy!

**note: I cut the recipe in half, as you’ll notice in these pictures.
