This recipe is two weeks in the making. I had planned on making this tasty treat for the 4th of July, but then I forgot to buy berries. Smart. When I finally did get to the store to buy the berries, I spilled the blueberries alllllll over the inside of the grocery cart. Of course this means that the berries slipped through the holes of the cart and onto the floor of the checkout line. Thanks to the nice cashier, who didn’t bat an eye, and my dear Joshua, who ran to get more berries, I made it out of the store in one piece, feeling super graceful as usual. With all the ingredients I was finally able to make the crostinis and was crossing my fingers that it was all worth the berry-fiasco. It totally was! I really enjoyed the crusty bread topped with sweet berries, creamy ricotta, and a perfect drizzle of honey. This snack would be a simple stunner at your next party!
Berry Crostini Printer-Friendly Recipe
Slightly Adapted From: Eat. Drink. Love
Prep Time: 20 minutes
Yield: 16-20 slices
Ingredients
1 loaf of crusty bread (I used my Easy Artisan Bread, but a French baguette would work)
Olive oil or melted butter
10 oz. Ricotta Cheese (Mascarpone Cheese or Cream Cheese can be substituted)
1 pint berries (I used blueberries and raspberries)
Honey for drizzling
Directions
Drizzle olive oil on sliced bread and either toast the bread on a grill or in a 350 degree oven. Toast for 3-5 minutes or until the toasts have nice grill marks or are turning golden. Let the bread sit for a few minutes before topping it.
Spread a little cheese on each toast and then pile on the berries. Drizzle with honey, serve, and enjoy!

There have been two separate occasions while in the same grocery store I left my boys too close to the spaghetti sauces and they began pulling, and subsequently dropping, the jars from the shelf. As it turns out, the sound of jars breaking is a real attention getting in a grocery store!!! I worry that some day I’ll walk into that store and see my picture at the entrance stating that me and my lovelies are banned from the premises…

Oh no, Bobbi!! I can imagine that would be embarrassing. Maybe they have your picture in the store with the caption “Sauce Lady.” 🙂 I’m thinking that I should have my groceries delivered to me to prevent any future spills.
