From: The Baker Chick
Makes: 12 Brownies
Prep Time: 20 minutes
Bake Time: 1 hour
Ingredients
Crust:
6 tablespoons unsalted butter, melted
1 1/2 cups crushed graham cracker crumbs
2 tablespoons sugar
Pinch fine salt
Brownies:
8 tablespoons (1 stick) unsalted butter
4 ounces unsweetened chocolate, chopped
1 cup packed light brown sugar
3/4 cup white sugar
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon fine salt
4 large cold eggs
1 cup all-purpose flour
Topping:
4 oz of milk chocolate bar, broken into squares/chunks
2 cups mini marshmallows
Instructions
For the Crust:
Preheat oven to 325 degrees. Prepare an 8×8″ baking pan by lining it with foil, leave about 1 inch of foil overhanging on the sides of the pan. Take a little bit of your 6 tablespoons of melted butter and grease the foil. Add the rest of the melted butter to a medium-sized bowl with the graham cracker crumbs, sugar, and salt. Mix together and press the mixture evenly in the bottom of the pan. Bake for about 20 minutes or until golden brown.
For the Brownies:
While the crust is baking, get the brownie batter ready. Place 1 stick of butter and 4 ounces of unsweetened chocolate in a bowl and microwave for 2 minutes. Stir the mixture, if it’s not completely melted, continue microwaving until melted. Add the granulated sugar, brown sugar, vanilla, and salt to the melted chocolate. Stir together. Add the eggs, stirring after each egg. This should make the batter nice and glossy. Fold in the flour until just incorporated.
Pour your brownie batter on top of the now golden brown graham cracker crust. Bake until the brownie top is crispy and a toothpick comes cleanly out of the center of the brownies, about 40-45 minutes. Poke the chocolate squares into the brownies. Top with the mini marshmallows and place under the broiler for about 2 minutes. Watch closely, you want the marshmallows toasted but not burnt.
Carefully remove the brownies from the pan by taking ahold of the foil flaps. Let the brownies cool completely on a wire rack. Once the brownies are cooled, cut into 12 squares. It helps if you dip a knife into warm water between each cut. Enjoy!
