Irish Soda Bread

As promised, I’m finally posting a recipe.  The recipe is for the Irish Soda Bread I made last weekend; it is crazy easy and delicious!  It only took me 10 minutes to get the bread into the oven, which makes it a perfect recipe for this crazy time of year.  In fact, I found time to make it twice.  The raisins add such a perfect amount of sweetness to the bread that I can’t help myself from grabbing a hunk of it every time I’m in the kitchen.  Raisins are healthy, right? 🙂

From: Gimme Some Oven

Ingredients

2 cups all-purpose flour
2 Tbsp. sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3 Tbsp. butter
1/2 cup raisins or dried currants
3/4 cup buttermilk

Directions

Prepare your a cookie sheet with parchment paper, a Silpat, or grease it up.  Preheat your oven to 375 degrees.

Combine the dry ingredients (flour, sugar, baking powder, baking soda, and salt) in a large bowl.  Add 3 tablespoons of butter to the flour mix and cut it in with a pastry blender, fork, or your trusty fingers.  Combine until the butter is mixed and the mixture looks like course crumbs.  Add your buttermilk and raisins and stir until evenly combined.

Place the dough onto a lightly floured or nonstick surface.  Knead until the dough comes together and form a 6-inch ball.  Place the ball onto your prepared cookie sheet.  Make a 1/4-inch deep cross on the top of the dough.  Bake at 375 for 30-40 minutes, taking the bread out when it is lightly golden brown.  Enjoy!
