Friday Favorites & a Fast Chocolate Chip Cookie in a Cup

What. a. week.  That’s all I have to say about that.  I haven’t had time to bake anything for 2 weeks!  It seems like an eternity.  Luckily, I have an unprecedented weekend off from taxes and plan on making sure I haven’t forgotten how to bake.  Unable to wait until this weekend, I had a sweet tooth emergency today and was happy that I had this Chocolate Chip Cookie in a Cup recipe on hand to help.  Needless to say, it’s the easiest thing I have ever “baked” and it’s a great recipe to have if you’re in pinch but really think you deserve a cookie.

Prep time:  5 mins
Cook time:  1 min
Total time:  6 mins
Serves: 1

Ingredients

1 Tablespoon Butter
1 Tablespoon Granulated White Sugar
1 Tablespoon of firmly packed Dark Brown Sugar
3 Drops of Vanilla Extract (I used about 1/16th of a teaspoon)
Small Pinch of Kosher Salt
1 Egg Yolk (discard the egg white or save for different recipe)
Scant ¼ of All Purpose Flour (slightly less than ¼ of a cup)
2 heaping tablespoons of Semi Sweet Chocolate Chips

Instructions

Add butter to a cup and microwave for about 40 seconds or just until the butter is melted, not boiling.  Add the sugars, vanilla, and salt and stir together.  Add the egg yolk and combine.  Add the flour and stir.  Lastly, add your chocolate chips and stir until combined.  Microwave the cookie dough for 40 and check to see if the cookie is done.  If it is mushy, microwave for up to 20 seconds longer until done.  Serve warm and enjoy!

Favorite Bars: Peach Crumble Bars.  Winter makes me miss peaches soooo much!  I’m anxious to make these bars once peach season hits.  Sweet peaches and buttery crumble are a combo you cannot go wrong with.

Favorite Felt Project:  Felt Shamrocks.  It’s no secret if you know Josh or me that we’re Irish and a wee bit proud of it.  And anyone that works at Michaels in Brighton probably knows that I love buying felt.  Combine these two facts and, well, how could I not love this project?

Favorite Cupcakes: Moist Chocolate Cupcakes with Oreo Cream Cheese Frosting.  Can you say “Yum?”

Favorite Wall Hangings: The Pine Nuts Wooden Home Decor.  Love, love, love!  Wooden and rustic and downright adorable.  How does one pick from these fantastic choices?  (psst, there are different states and letters available to buy if you follow the link)

Favorite Comfort Dish: Polenta Al Forno with Collard Greens, Cheddar & Ricotta.  This recipe sounds amazing.  Cheesey, warm, and comforting…now that’s what I’m looking for in a meal.

Favorite Fancy: 10 Confetti Projects.  Oh my!  These fabulous confetti uses were posted for NYE, luckily we all know that glitter and confetti are always in season.  Always.

Favorite Bread: Traditional Greek Pita Bread.  Yes!  Chewy, soft goodness.  Pass me a bowl of hummus to plop these suckers in and I’ll be a happy lady.

Favorite Nails: Essie Nail Appliques.  Essie knows nail art and they now have their own line of nail appliques.  Hooray!  This one below is fun.  I’m thinking ring fingers in this and the rest of the fingers in a gold polish…pretty, pretty.

Favorite Cookies: Homemade Girl Scout Tagalong Cookies.  Where are the Girl Scouts in this town?!?!  I need them to force me to buy cookies!  Saved by the bell with this recipe, I can make them at home to cure the craving now.

Favorite Truffles: Apple Pie Cake Truffles.  Remember that one time I made an Apple Pie Layer Cake?  Well this is the cake in truffle form!  Just when I thought the cake couldn’t get any better, it now comes in bite-sized form.  Dangerous. 🙂

Favorite Dress like a TV Star Guide: Curvio will help you dress like the stars on several popular TV shows!  I can’t believe I’m telling you this, but my guilty pleasure is Pretty Little Liars and that’s one of the shows Curvio has listed.  Now I know where to buy a bracelet similar to the one Aria wore on an episode of PLL!  Ok, someone please tell me they watch this show too?

Favorite Cake: Carrot Cake with Cream Cheese Frosting.  So carrot cake isn’t the first cake I reach for, but this cake looks irresistible.  I also think it would be a perfect Easter cake!

Favorite Chicken: Buffalo Chicken Wings.  We eat an INSANE amount of chicken wings in our house.  I just love ’em.  Perhaps it’ll help the pocket-book if we start making them at home.  This recipe looks like the real deal.
