Oatmeal Chocolate Bars

Potential Superbowl Sunday dessert for you right here!!  These cookie meets bar Oatmeal Chocolate Bars are chewy and chocolatey and are sure to feed a crowd.  Be warned, this recipe makes a TON of bars.  You’ll want to share them.  Sharing is caring. 🙂

Makes: 1 18×13 inch jelly roll sheet of bars

Ingredients

1 cup butter or margarine, softened
2 cups brown sugar
2 eggs
2 tsp vanilla
2 1/2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
3 cups oats, quick or regular…whatever you prefer
1 14 oz can sweetened condensed milk
1/4 cup butter or margarine
1 12 oz bag chocolate chips (or use a total of 12 oz of chocolate & peanut butter chips)
2 tsp vanilla

Directions

Preheat oven to 350° and lightly grease an 18×13 inch cookie sheet with sides (aka a jelly roll pan).

In a medium bowl, cream together 1 cup of butter, brown sugar, eggs, and 2 teaspoons of vanilla.  Add the flour, baking soda, salt, and oats.  Stir together until combined.

Press 2/3 of the oatmeal mixture onto your pan.  A good trick to getting the dough to spread out evenly and not stick to your hand is to place a plastic baggie over your hand and press away.  Keep pressing, you can do it!

In a medium bowl in the microwave or in a double boiler on the stove top, melt the sweetened condensed milk, 1/4 cup butter, 12 oz. of chocolate chips, and 2 teaspoons of vanilla.  If using a microwave, microwave in 30 second intervals stirring in between until the mixture is smooth.

Pour your chocolate mixture over the oatmeal layer and spread evenly with a spatula.  Crumble the remaining 1/3 oatmeal mixture over the top of the chocolate layer.

Bake for 20-25 minutes or until the top of the bars are a light golden brown.  Let cool and slice.

I used leftover bags of chocolate chips and peanut butter chips to make up the 12 oz of chips I needed. A great way to clear out the pantry!
