Halloween is tomorrow and I am having a really, reeaalllllly hard time not eating all of the candy I bought on Sunday. I needed a sweet & salty fix fast before the Halloween candy mysteriously disappeared. Kettle Corn to the rescue!! A snack with the perfect amount of sweetness and a dash of salt that can be made in around 5 minutes. It doesn’t get much better than that!

Serves 4-5
Ingredients
1/4 cup extra light olive oil or vegetable oil
1/4 cup sugar
1/2 cup good quality popcorn kernels
fine salt
Directions
Heat oil in a deep, large pot. Place a few kernels of corn in the oil and cover pot with lid. Once the kernels have popped, you know the oil is hot enough. Pour in the rest of the kernels and sugar. Stir the mixture and then place the lid back on the pot. Continue to cook while shaking the pot often (this is to prevent the sugar and popcorn from burning). The popcorn is done when there is a long gap between pops. Remove from heat and continue shaking until the popping has stopped.
Sprinkle the popcorn with a pinch of salt, shake, and then pour into a large popcorn bowl. If you have big clumps, break them apart. Enjoy!
