It’s Friday!! We are headed to the Midwest today for 11 days of fun with family & friends. It’s always great to go back home. 🙂 Before I show you this week’s Friday Favorites, I want to share the 6th recipe of Grill Week: Grilled Pizza! Makes 2 12-inch pizzas or 1 large 16 to 18-inch pizza
Ingredients
1 1/4 cups warm water
2 teaspoons instant yeast
2 tablespoons sugar
1 tablespoon honey
1 tablespoon olive oil
2 teaspoons salt
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
Toppings for your pizza (I used fig preserves, prosciutto, goat cheese, & spinach~as inspired by mylifeasamrs)
Directions
Prepare the pizza dough the night before or early in the morning of the day you want to make the pizza. In the bowl of a stand mixer, mix together the water, sugar, honey, oil, and yeast (if using active dry, use 2 3/4 teaspoons and proof in warm water until foamy before adding to the mix). Mix in 1 cup of flour and salt. Continue mixing in the flour until a soft dough forms. Use the dough hook to knead for 5 minutes (alternatively, you could knead by hand for 10 minutes.)
Form a ball with the dough and place in a large greased bowl. Cover with plastic wrap or a towel and refrigerate the dough in the refrigerator. Remove dough from fridge three hours before baking to allow the dough to come to room temperature, lightly covered.
Fire up the grill to medium heat. Shape the dough into an oval or rectangle. Place dough on a greased baking sheet and brush the top with olive oil. Bring your dough and toppings to the grill (don’t top yet, you just want to have them ready). Carefully place the pizza on hot grill. Close the lid of the grill and cook for 2-4 minutes, until dough starts to bubble on the top and the bottom has grill marks. Use tongs to flip the dough over. Top pizza with desired toppings and close lid of grill and cook for an additional 2-3 minutes. Remove from grill, slice, and enjoy!

Favorite Drink: Oatmeal Smoothie. I’ve been drinking a lot of Green Monsters lately, but I might need to add this oatmeal smoothie to the rotation. It’s a more appetizing color, too. 🙂
Favorite Rug: A rug made by crocheting old sheets together. Now that I’m old, I’m considering learning how to crochet…
Favorite Cake: One Bowl Chocolate Cake. This looks like a great cake to make when you’re in a hurry, but still want to wow people.
Favorite Cleaning Helper: How to make reusable Swiffer dusters out of materials from the dollar store. Brilliant!
Favorite Sauce: Old Fashioned Beef Spaghetti Sauce. A big plate of spaghetti with a meaty sauce is my idea of a comfort meal.
