Green Monster Smoothie

July 30, 2012 by Melissa

Alright, I have a secret to share with you.  I eat more than just cakes, pies and cookies, unlike my blog might lead you to believe.  Though there’s no denying my love of desserts, I actually like fruits & vegetables.  A lot.  In fact, I try to eat fairly healthy most of the time so that I can eat all the sugary, buttery, floury treats the rest of the time and feel guilt-free.  🙂

I have seen a ton of recipes for Green Smoothies, Green Monsters, and Green Goblins floating around the web.  It’s a combo of fruit, Greek yogurt, and spinach (hence the green).  I was a bit hesitant to try this, but after reading so many positive reviews of these concoctions, I decided it was time to try it out.  To my surprise, they’re great!  I didn’t taste the spinach, only the tang of the yogurt and the bursting fruit flavors.  It was a wonderful way to start off my day today.  I will most definitely be adding this to my rotation of breakfasts from now on.  I’m excited to play around with different fruit combos.  Another plus, it kept me full until lunch!

Makes 2 servings
Prep Time: 5 minutes

Ingredients

1 large orange, peeled and segmented
1/2 of a large banana, cut into chunks
6 large strawberries
2 cups spinach
1/3 cup plain Greek yogurt (I used Oikos 0%)
1 cup ice

Directions

Add all of the ingredients to a blender. Puree until smooth. Pour into glasses and drink up! If you have leftovers, place in an air-tight container and refrigerate.  You can also freeze it. To thaw out, take out of freezer about 30 minutes before you want to drink it. Enjoy!

Add 1 large peeled & segmented orange to a blender.

Add 1/2 of a large banana, cut in chunks. Tip: cut and freeze the banana the night before.

Add 6 large strawberries.

Add 2 cups of spinach.

Add 1/3 cup of plain Greek Yogurt. I used Oikos Plain 0%.

Add 1 cup of ice.

Put the lid on…

and let ‘er rip until all the ingredients are well blended.

Pour & enjoy!

Don’t be afraid of the color…it’s delicious!

Cheers to Monday! I don’t think I’ve ever said that before. 😉
