I’m back!! Sorry it’s been so long, but now that tax season is over you have my full attention! I’ve missed being in the kitchen and am happy to get back in there. I’ve accumulated quite the list of recipes that I want to make in the coming months, and of course I will be sharing them with you! For now, let me share this quick & easy recipe for Cookie Dough Bites. Aside from being delicious, they were super easy for me to make before the final taxing week of tax season (haha…accountant’s humor).

Hands-On Time: 20 minutes
Ready In: 1 hour
Yield: 2 dozen cookies
Ingredients
1 cup salted butter, softened
1½ cups packed light brown sugar
1 teaspoon vanilla extract
2 cups flour
6 ounces miniature chocolate chips
Extra chocolate for coating or drizzling, if desired.
Directions
In mixing bowl, cream together the butter and sugar. Add in the rest of the ingredients and mix well (a wooden spoon or clean hands work best). Scoop out 1-inch balls of dough. Place dough on a plate or cookie sheet and refrigerate for about 30 minutes. Coat the cookie dough bites in melted chocolate, or drizzle, or leave plain. Store in fridge and allow the cookie dough bites to sit at room temperature for 10 minutes before serving (easier to bite into them this way).
