Cake Batter Truffles

Raise your hand if you like cake batter.  Now raise your other hand if you like truffles.  I’m going to go ahead and assume that you have both of your hands in the air now.  Hopefully you aren’t in public.  You must try cake batter truffles!  These are seriously delicious, fun, cute, amazing, perfect, etc.  I made these for the NYE party I had with my family and they were a hit!  So keep this recipe in mind for the next time you need to make something for a birthday or party.  Or just an average Wednesday.

Cake Batter Truffles                          Print Recipe
From The Girl Who Ate Everything
Makes: 24-30 Truffles

 Ingredients

 1 ½ cups flour
1 cup yellow cake mix
½ cup unsalted butter, softened
½ cup white sugar
1 teaspoon vanilla
1/8 teaspoon salt
3-4 Tablespoons milk
2 Tablespoons sprinkles

Truffle Coating

16 ounces (8 squares) almond bark (or white candy melts)
4 Tablespoons yellow cake mix
sprinkles

Directions

In a large bowl, beat together the butter and sugar with an electric mixer until combined. Mix in the cake mix, flour, salt, and vanilla until thoroughly combined.  Now mix in 3 tablespoons of milk (more if necessary) to bring the dough to your desired consistency.  Carefully fold in the sprinkles. Roll out 1-inch balls with the dough and place on a parchment-lined baking sheet.  Place the balls in the fridge and chill for 15 minutes.

When the balls have firmed up, make the chocolate coating.  Melt the almond bark in a microwave safe bowl in 30-second intervals, stirring in between each, until completely melted.  Stir in the cake mix until fully combined.
Dip a truffle in the almond bark using two forks, shaking the excess bark off and then placing back on the baking sheet.  Top with sprinkles immediately.  Repeat the process until all of the truffles are coated. Place the truffles back in the fridge until ready to serve. Enjoy!

Use a cookie scooper to make forming the balls easier!

All ready to chill in the fridge for 15 minutes

Oh no! A casualty on the way to the fridge. To this very day I regret not picking it up, dusting it off, and popping it in my mouth hole.

Dip into the chocolate with one fork…

…and use second fork to help coat the truffle and put back onto baking sheet

Top with sprinkles

Whoopsie! I didn’t buy enough white chocolate, so I used some chocolate almond bark for the rest of the truffles

I added different sprinkles to the chocolate truffles (thanks for the sprinkles Jennifer!)

Had to taste test one!

My sister couldn’t wait to try it either! (or she just really liked putting her hands in front of my camera….)

Oh. So. GOOD!

And we lived happily ever after!
