Soft Oatmeal Chocolate Chip Cookies

Here is one of my favorite chocolate chip cookie recipes.  I remember the first time my mom made them when I was in high school, it was love at first bite!

Soft Oatmeal Chocolate Chip Cookies

Makes about 5 dozen small cookies, 3 dozen medium

Ingredients

1 1/2 to 1 3/4 Cup Flour
1 tsp baking soda
1 cup butter or margarine, softened
1/4 cup granulated white sugar
3/4 cup packed brown sugar
1 small package instant vanilla pudding
2 eggs
2 cups quick cooking oatmeal
1 cup chocolate chips (who am I kidding, I always use a whole bag)

Directions

Mix butter with sugar and brown sugar.  Add pudding mix and beat until smooth and creamy.  Beat in eggs.  Add flour and baking soda, then stir in chocolate chips and oatmeal.  Shape into small balls and place on lightly greased cook sheet.  Bake at 350 for 10-12 minutes.

The pudding mix is the trick to making these cookies so soft.  I think I’ll try chocolate pudding in them sometime!

You could substitute raisins for the chocolate chips.  If you do that, try adding a tsp. of cinnamon to them, it’s a great compliment to the raisins and oatmeal.
