College Football season has arrived! Whether or not you like football, I’m pretty sure you’ll love this recipe. My husband found it about 4 years ago on a Notre Dame blog and now it’s one of our must-haves during football season.
Chicken Jalapeno Dip Print RecipeIngredients
2 Large boneless, skinless chicken breasts
1 cup sliced jalapenos (we like things spicy, so we add a little more)
1 medium fresh diced tomato
8 oz. cream cheese (leave out about 30 min before using, makes it easier to work with)
2 c. sharp cheddar, shredded
1 c. real mayo
2 c. monterey/colby jack, shredded
Directions
Boil the chicken breasts 10-12 minutes. Shred after boiling. Stir jalapenos, diced tomato, cream cheese, cheddar, & mayo together. Add chicken and mix. Empty into a baking dish (we use a shallow 8×11″ CorningWare baking dish) and distribute evenly. Bake at 350 around 35 minutes. Take out and pour colby jack on top. Put back in oven 10-15 more minutes or until cheese is bubbling and starting to turn golden brown. Take out and wait 5-10 minutes before digging into with tortilla chips.
Feel free to modify the recipe. You could do a meatless version, maybe add some black beans as a replacement. You could also use low-fat ingredients if you wish.
