S’more Cupcakes

Labor Day is approaching and it’s about time to say good-bye to summer.  One of many things that I love about summer are S’mores.  For the last 2 summers I’ve experimented with the following S’more Cupcake recipe, and I must say they are delicious and a fun treat for summer!  I got the recipe for the chocolate cupcakes from Martha Stewart (she tends to be my go-to for all things baking) and the frosting recipe is an alteration of a few recipes I found online.

Chocolate Cupcakes       Print Recipe

From Martha Stewart

3/4 cup unsweetened cocoa powder
1 1/2 cups all-purpose flour
1 1/2 cups sugar
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
3/4 teaspoon salt
2 large eggs
3/4 cup warm water
3/4 cup buttermilk
3 tablespoons safflower oil
1 teaspoon pure vanilla extract

Directions

Preheat your oven to 350 degrees and line a muffin pan with paper liners.  Set aside.

In a large bowl, sift together the cocoa powder, flour, sugar, baking soda, baking powder, and salt.  Create a well in the center the of the flour mixture and add in the eggs, warm water, buttermilk, oil, and vanilla.  Use and hand mixer and mix until smooth, about 3 minutes (make sure the scrape the sides of the bowl throughout the mixing process).

Pour the batter into the prepared muffin pan (each will be about 2/3 full). Bake for around 20 minutes in preheated oven (rotating halfway through) until the cupcakes are springy to the touch.  Remove cupcakes from oven and allow to cool in the pan on a wire rack.  Cool completely before frosting.

Frosting

2 1/2 sticks of unsalted butter, room temperature
1 lb. confectioner’s sugar
1/2 tsp. vanilla
16 0z. tub marshmallow cream

Directions

Cream butter in mixer on high until light & fluffy.  Add confectioner’s sugar, 1/4 cup at a time & beat until fluffy each time.  Mix in the vanilla.  Add the fluff and continue mixing until mixture is creamy.  Transfer the frosting to a pastry bag (a ziplock back with a tip cut off will work too) and pipe the frosting onto cooled cupcakes.
To decorate, I like to top with crushed graham crackers and a Hershey’s Chocolate square.
