I’ve been playing around with fudge recipes and recently made a Chocolate Peanut Butter Fudge. My inspiration comes from a fabulous Peanut Butter Bar that I get every time I go to Goodies in Spirit Lake, IA. It’s two layers of chocolate fudge enveloping a creamy peanut butter fudge…can’t go wrong there!
I used a recipe from Cooks.com for an easy Chocolate Fudge (minus the walnuts) and made up my own Peanut Butter Fudge recipe after experimenting with a couple other recipes. I made a 1/2 batch of the Chocolate Fudge at a time. Let the first 1/2 batch firm in your 8″ pan. Then add your batch of Peanut Butter Fudge; let firm. Then make another 1/2 batch of Chocolate Fudge & add to the top of the Peanut Butter Fudge.
Chocolate Fudge Print RecipeYield: 1 pound (make a 1/2 batch at a time if you want layers like pictured above)
Ingredients
1/4 cup butter
4 oz. unsweetened chocolate
1 egg, unbeaten
2 tbsp. light cream
1 tsp. vanilla
1 lb. box powdered sugar (4 cups)
Directions
Line an 8×8″ pan with parchment paper, spray with cooking oil, and set aside.
In a small bowl set on top of a small sauce pan of boiling water (a double boiler), melt together the butter and chocolate, stirring occasionally until smooth. Allow the chocolate to cool for a few minutes. Combine the egg, light cream, vanilla, and powdered sugar together in a large bowl. Stir in the melted chocolate and beat until just combined.
Pour the mixture into your prepared pan and refrigerate until firm, at least 1 hour.
Peanut Butter Fudge
Ingredients
4 oz. of Cream Cheese
2 1/2 Cups of Powdered Sugar; sifted
1/2 Cup of Creamy Peanut Butter
Pinch of Salt
Directions
Beat cream cheese then add peanut butter, salt & sugar. Mix well with a wooden spoon and press into an 8″ square pan.
I’m going to keep playing around with this recipe…I’d like to find a firmer Chocolate Fudge, so if you’ve got a good recipe send it my way! In the meantime, this is a delicious treat will satisfy any Chocolate/Peanut Butter fanatic!
