I loveĀ a good monster cookie, don’t you? I took all of the goodness from monster cookies and jammed them into these bars. They are loaded with peanut butter, oats, and chocolate. Simply divine.
Monster Cookie Bars

A fluffy, yet gooey bar filled with all of the peanut butter and chocolate your heart desires. Great for picnics, tailgating, and lazy days spent watching football.
Ingredients
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup oats
- 1/2 cup creamy peanut butter
- 1 cup M&Ms (I used peanut butter, but you could also use plain or peanut)
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup peanut butter chips
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line an 8×8″ baking pan with parchment paper and set aside.
- In the bowl of a stand mixer, cream together the butter and sugar for 2 minutes. Add in the eggs and vanilla, mix until combined and scrape down the sides of the bowl. Now slowly mix in the flour, baking powder, and salt until just combined. Next, mix in the oats and peanut butter until just combined. Finally, gently mix in the M&Ms, chocolate chips, and peanut butter chips until evenly distributed.
- Press the dough into your prepared pan. Bake in preheated oven for 25-30 minutes, until the center of the bars is set and the top is turning golden brown. Remove pan from oven and allow to cool before slicing and enjoying. Keep in an airtight container for up to a week.
Notes
If you want a thinner bar, use a 9×13″ pan, just adjust your bake time down to around 20 minutes.
