It’s Friday!! We are headed to the Midwest today for 11 days of fun with family & friends. It’s always great to go back home. :) Before I show you this week’s Friday Favorites, I want to share the 6th recipe of Grill Week: Grilled Pizza! I finally found a great pizza dough recipe that holds up on the grill. I’ll keep the pictures to a minimum, since there are plenty of Friday Faves for you to see…

Makes 2 12-inch pizzas or 1 large 16 to 18-inch pizza
1 1/4 cups warm water
2 teaspoons instant yeast
2 tablespoons sugar
1 tablespoon honey
1 tablespoon olive oil
2 teaspoons salt
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
Toppings for your pizza (I used fig preserves, prosciutto, goat cheese, & spinach~as inspired by mylifeasamrs)
Make the dough the night before or early the morning on the day you want to make the pizza. In a large mixing bowl (or in the bowl of a stand mixer), mix the water, yeast, sugar, honey and oil. (If using active dry yeast, increase the amount of yeast to 2 3/4 teaspoons and proof the yeast in the water until foamy before mixing in the sugar, honey and oil.) Then mix in 1 cup flour and the salt. Continue mixing in all the remaining flour until you get a nice, soft dough. Knead until dough is soft and smooth, about 10 minutes by hand or 5 minutes with a stand mixer.
Shape the dough into a ball and place in a lightly greased bowl and cover tightly (with a lid or plastic wrap). Place the dough in the refrigerator to slowly rise until three hours before baking. Three hours before baking, remove the dough from the refrigerator and let it come to room temperature, keeping it lightly covered.
Preheat your grill to medium heat. Shape your dough into an oval or rectangle and place on a greased baking sheet, lightly brush the top with olive oil. Gather your toppings for the pizza. Bring the pizza dough out to the grill and gently lift the dough onto the hot grill. Close the lid and let the dough cook for 2-4 minutes. The dough is ready to flip when it has bubble on the surface and the bottom has grill marks. Use a pair of tongs to gently flip the dough over. Spread your sauce onto the pizza and layer on your toppings. Close the grill and let the pizza cook for another 2-3 minutes. Carefully remove your pizza, slice, and enjoy!

Favorite Rug: A rug made by crocheting old sheets together. Now that I’m old, I’m considering learning how to crochet…
Favorite Cake: One Bowl Chocolate Cake. This looks like a great cake to make when you’re in a hurry, but still want to wow people.
Favorite Cleaning Helper: How to make reusable Swiffer dusters out of materials from the dollar store. Brilliant!
Favorite Sauce: Old Fashioned Beef Spaghetti Sauce. A big plate of spaghetti with a meaty sauce is my idea of a comfort meal.
